Healthy Banana Bread (Gluten Free)

Not sure about you but I love having options for breakfast prepped for those busy weekday mornings. Something quick, something that I can pop in the microwave and get my day started. On slow weekdays I have my avocado toast with an egg on top, but lets be serious here... who has time to make a yummy hearty breakfast EVERY morning? Not me, and I'm sure you don't either.
Banana bread is one of my favorites and I can eat it all year around. It is such an easy and delicious breakfast for a busy morning AND the best part is.. you won't even feel guilty with these ingredients!! Are you drooling yet?! Well here's what you'll need.
2 medium ripe bananas
2 cups almond flour (I don't recommend subbing for a different flour)
1 tbs honey
2 tbs coconut oil (melted)
3 eggs
1/3 nut butter (I used almond butter but any will work)
1 tps baking powder
Splash of vanilla
Sprinkle of cinnamon (In the mixture or on top, I did both)
I topped mine with Walnuts but any nuts will work!
**Preheat oven to 350 degrees and cook until tooth pick or knife come out clean. Cook time will vary depending of the size of the pan.
I usually like to make mine in a muffin tin so they are the perfect size to grab and go.
I store mine in the fridge and they stay good for 5-7 days. Make them in bulk, pop them in the freezer and they'll last you weeks!
